Lobster and Oyster Sauce Recipe
Make 1 1/2 cups stock from fish bones, lobster shells, and oyster liquor, adding 2 slices onion, 1/2 of a tomato sliced, 1 tbsp. mushroom ketchup, 1/4 teasp. each salt and paprika, and blade of mace. Strain onto 2 tbsps. butter cooked with 2 of flour, add 1/2 cup each lobster dice and oysters cut in small pieces, and 1 tbsp. tarragon vinegar. Color red, add another tbsp. butter.
